Roasting Shrimp

Shrimp: the ultimate finger food, perfect as hor d’oeuvres and appetizers, great in seafood dishes and salads, or perfectly delicious by themselves. I’m a huge fan of shrimp, and I’ve tried cooking it several different ways; above all, the very best way I’ve found is to roast them. The only thing needed to prep them is to toss the shrimp with olive oil, salt and pepper and simply roast in the oven at about 400ºF for about 8-10 minutes, or until pink. The roasting process (with anything, really, not just shrimp-try it with pretty much any vegetable) really brings out a ton of flavor; it adds just a hint of natural, nutty flavor and it keeps the shrimp nice and juicy.
